CHOCOLATE SOUFFLE

INGREDIENTS


Milk                      - 1/2 cup
Bakers chocolate - 2 ounce
Sugar                   - 2 tsp
Butter                  - 1 tsp
Flour                   - 2 tsp
Eggs                    - 4

DIRECTIONS


1.  Put the milk in the double boiler and place on the fire.
2.  Beat the butter to a soft cream, and beat flour.
3.  Pour the bot milk and stir well. cook for 6 min
4.  Put the chocolate, sugar and water in a small pan over a hot fire,
     stir until smooth and glossy.
5.  Add well beaten eggs and set to cool.
6.  When cool add egg white and again beat.
7.  Pour the batter into a well buttered dish and cook in a 
     moderate oven for 20 mins.
