VEGETARIAN ENCHILADAS

INGREDIENTS

Olive oil                 - 1 cup
Yellow onion         - 1/2
Mushrooms           - 8
Sweet yellow corn - 1/2
Black beans          - 1/2 cup
Enchilada sauce   - 12 ounce
Wheat tortillas       - 5
Cheddar cheese    - 1

DIRECTIONS

1.  Preheat oven to 350 degree.
2.  In a large skillet, add oil, saute onion  and mushroom and stir.
3.  Cook well, add corn and black beans and stir together.
4.  Pour in half jar of enchilada sauce and stir until everything is coated.
5.  Scoop the filling onto a tortilla, roll up it and place in casserole dish.
6.  Repeat until the dish is full, pour the remaining sauce on top.
7.  Cover with cheese. put it in oven to melt cheese.
