POACHED EGGS OVER SAUTEED GREENS

INGREDIENTS

Eggs              - 4
Vinegar          - 1 tsp
Sliced leeks    - 1 cup
Garlic cloves  - 5
Kale chopped - 4 cups
Broth              - 5 tsp
Lemon juice   - 2 tsp
Potato fry       - 10
Salt and pepper to taste

DIRECTIONS

1.  Slice leeks and garlic , bring water and vinegar to a fast simmer in a skillet
     large enough to fit eggs.
2.  Heat broth add leeks and cook, add garlic and saute and stir.
3.  Add kale, broth lemon juice and simmer for 5 min.
4.  Add salt and pepper to taste. 
5.  In a plate, place poach eggs, mix, greens and fried potatoes.
