CORN SUNDAL

INGREDIENTS


Corn cob      - 2
Carrot          - 1
Tomato        - 1
Coconut       - 2 tsp
Green chilli  - 4
Oil                - 2 tsp
Mustard       - 1 tsp
Urad dal       - 1 tsp
Asafotida     - 1/4 tsp
Lemon juice - 1/2 tsp
Salt to taste
Curry leaves

DIRECTIONS


1.  Cut the corn cobs into two and cook well, when it cool remove the kernels from it.
2.  Chop green chillies, carrots.
3.  Chop curry leaves, cut tomato length wise into thin strips. 
4.  Use only skin portion and remove the inner seed portion.
5. In a pan, heat oil add mustard, add urad dal and asafotida and fry.
6.  Add chilli and curry leaves, stir well, add carrot and corn cook well
7.  Add salt and coconut, tomato, lemon juice and mix well.
8.  Serve with hot.
